Associate Professor Lee Schulz was interviewed by Inforum for the article "Finding workers critical for planned pork plant in Sioux Falls," which focuses on a new meat packing plant opening in Sioux Falls.
Schulz told Inforum that meatpacking is a highly trained business. “It’s not something you can just hop on the floor and start slaughtering and cutting meat. There’s a level of training and expertise needed. So that challenges the labor supply as well.”
