Spanghero

 

Spanghero is a factory located in Castelnaudry, France that packages a very popular dish in Southern France called Cassoulet.  Cassoulet is a mixture of sausage, duck or goose, and a white bean stew.  Spanghero was found in 1970 at Castelnaudary and has been growing ever since.   The factory currently employs over 400 people and has recently expanded their marketing outside of France.  However, the majority of the product is still sold locally in Southern France.

 

The process of making the Cassoulet begins with the duck or goose meat processing.  Spanghero pre-cooks all the duck and goose, and then processes the meat for de-boning and removal of unsatisfactory meat.  The sausage is also made at Spanghero, and pre-cooked as well.  After the raw materials are prepared, they are cut and put into cans for the soup.  The beans and stew are added after this, and the large cans are packaged and shipped to customers.

 

The picture below shows a part of the meat preparation.  An employee can be seen removing the cooked duck from the ovens and putting them into machines that de-bone the duck.
